If you are feeling cold today ......

...  you will be pleased to know that January 6th is National Cuddle Up day.   So cuddle up to loved ones and even your pets.

It is also National Shortbread Day.   One of my favourite biscuits.   Love them with strawberries and cream.

Here is my recipe.

Shortbread

9oz Plain Flour
6oz Butter  (I buy a block and leave out of the fridge so more manageable)
3oz Sugar (I use brown but any sugar will do) 

Heat oven to Gas Mark 4. 

Into a bowl sift the flour.  Cut the butter into cubes and put into the flour.    Rub the flour and butter together and add sugar.   Continue binding until the mixture makes a dough.  

Roll the dough into a sausage shape. 

Wrap in cling film and place into the fridge for 20 minutes.

Take out the dough and unwrap.    Cut into 2cm thick rounds.  

Place onto a baking tray which you can cover with greased proof paper.

Place in the oven for about 15minutes or until golden brown.

Leave to cool and then sprinkle with caster sugar.

Enjoy with a cup of coffee or on the side of strawberries and cream.
