Christmas Cake is made and here is my recipe.


Heat oven to Gas Mark 2

Line an 8 inch cake tin make sure it is quite deep :)

225g (9oz) Plain Flour
1/4 teaspoon salt
1 x 5ml (teaspoon) mixed spice
200g (8oz ) butter
200g (8oz) Dark Brown Sugar
2 x 15ml (Tablespoons) black treacle
1/2 teaspoon vanilla essence
4 large eggs, lightly beaten
800g (2lb) dried mixed fruit
4oz chopped peel
6oz glace cherries (halved)
4oz blanched almonds (chopped) (I left mine whole )
3 tablespoons of brandy, or the alcohol you wish to use, rum, port, sherry

Sieve together the flour salt and mixed spieces.  Cream the butter, sugar, treacle and vanilla essence.  Beat in the egges a little at a time. adding a tablespoon of flour each time.  Fold in the remaning flour.  Then the fruit and almonds.  Finally the peel and cherries.

Spoon into your tin and bake in the oven for about 3 - 4 hours.   Test with a skewer to check it comes out clean.   Remove from the oven and leave to cool for 15 minutes.    Turn over and make a few skwere holes then pour on the brandy or the alcohol you have chosen.    Wrap cake up in either greaseproof paper or foil and leave in a tine for about a week before using or decorating.
