My weekend bake .... Egg custard tart

For the pastry
6oz plain flour
3oz butter
1oz sugar
1 egg yolk
2 tablespoons of water

For the filling
1 egg white
2 eggs
1/2 pint milk
2oz sugar

Nutmeg to sprinkle on the top

To make pastry put the flour, butter and sugar into a bowl and add rub until breadcrumbs.  add the yolk and a little water at a time to make a pastry dough.

Roll out and line an 8in tin with the same.   Bake blind in an over for about 15 minutes at gas mark 6.
Remove from the oven,

Turn oven down to Gas mark 3

In a pan warm the milk.  In a jug beat the egg white, eggs and sugar lightly.  Pour in the hot milk and then pour into the pie case.     Sprinkly on nutmeg and cook for about 35 minutes or until the egg custard is set.

Enjoy hot or cold.
