My bake for today ..... Hawaiian Macadamia Cake


I love trying out new recipes and this one was lovely to make.  It smelt really nice when cooking and tastes delicious.   Here is the recipe :

375g of Self Raising Flour
1 teaspoon of ground cinnamon
185g of caster sugar
90g of dessicated coconut
5 eggs lightly beaten
440g tin of crushed pineapple (if you wish the cake to be sweeter then use one in syrup I used the one in its            own juice. )
375ml of vegetable oil ( I used ground nut oil)
100g chopped macadamia nuts.

Heat oven to Gas mark 4  / 180 degree C
Line a 9 inch large cake tin ( I just lined the base and use a springed version  If using a non spring version fully line the tin).

Sieve together the flour and cinnamon.   Add the sugar and the coconut.   Mix together all dried ingredients.  
Add the pineapple, eggs, oil and mix well.    Add the nuts and mix again.

Pour  into the baking tin and cook for about one hour.   Check .  If a skewer comes out clean then cook for a little longer.  If it starts to brown too quick then put tin foil on the top until the skewer comes out clean.

Leave to cool.     Nice served with ice cream or whipped fresh cream.
