Recipe for the weekend

POACHERS ROLL

Ingredients

Packet of puff pastry
Minced meat - (I use steak mince but you can use lamb, pork or chicken)
1 finely chopped onion
I grated carrot
2 sliced tomatoes (salad size) or several small piccolo tomatoes (cut into quarters)
Seasoning
Oxo cube (to suit meat or a vegetable one)

Preheat oven to gas mark 7

Roll pastry into a rectangle so that the long side is by you .
On one half of the pastry layer some mince, onion, carrot, and tomatoes. Sprinkle on oxo then repeat the layers finishing with a thin layer of meat.
Pull the other half of the pastry over to cover the filling. Seal the edges with a form by pressing together. Score lightly on the top of the roll.
Place in hot over for about 10 minutes until the pastry has puffed up then tuirn over down to about gas mark 3 or 4. Leave to cook for about 35 - 40 minutes.

Serve with gravy, potatoes of your choice and vegetables to accompany the pie. I usually serve peas or runner beans.
This can also be served as a vegetarian dish by using relevant pastry and missing out the mince, as long as the additional vegetables you ass are thinly sliced or grated ie parsnip, swede, potatoes,
